4th of July - Caribbean Jerk Pork Chops

INGREDIENTS:

* 3/4 cup water
* 1/3 cup lemon juice
* 1/3 cup chopped onion
* 1 tablespoon packed brown sugar
* 1 tablespoon chopped green onion
* 1 tablespoon canola oil
* 3/4 teaspoon salt
* 3/4 teaspoon ground allspice
* 3/4 teaspoon ground cinnamon
* 3/4 teaspoon ground black pepper
* 1/2 teaspoon dried thyme, crushed
* 1/4 teaspoon cayenne pepper, or to taste
* 6 lean pork chops, 1/2 inch thick

DIRECTIONS:

1. Combine water, lemon juice, onion, brown sugar, green onions, oil, salt, allspice, cinnamon, black pepper, thyme, and cayenne pepper in a blender or food processor. Blend until smooth. Reserve 1/2 cup for basting.
2. Place pork chops in shallow glass dish. Pour remaining marinade over the meat. Cover, and refrigerate at least 12 hours, but no longer than 24 hours.
3. Preheat grill for medium heat. Place grate 4 to 5 inches above heat source.
4. Oil the grill grate. Arrange chops on grate, and discard marinade. Cover grill, and cook chops for 10 minutes, turning once, or to desired doneness.

4th of July Treat - Jamaican Jerk Chicken

INGREDIENTS:

* 6 skinless, boneless chicken breast halves - cut into chunks
* 4 limes, juiced
* 1 cup water
* 2 teaspoons ground allspice
* 1/2 teaspoon ground nutmeg
* 1 teaspoon salt
* 1 teaspoon brown sugar
* 2 teaspoons dried thyme
* 1 teaspoon ground ginger
* 1 1/2 teaspoons ground black pepper
* 2 tablespoons vegetable oil
* 2 onions, chopped
* 1 1/2 cups chopped green onions
* 6 cloves garlic, chopped
* 2 habanero peppers, chopped

DIRECTIONS:

1. Place chicken in a medium bowl. Cover with lime juice and water. Set aside.
2. In a blender or food processor, place allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper and vegetable oil. Blend well, then mix in onions, green onions, garlic and habanero peppers until almost smooth.
3. Pour most of the blended marinade mixture into bowl with chicken, reserving a small amount to use as a basting sauce while cooking. Cover, and marinate in the refrigerator for at least 2 hours.
4. Preheat an outdoor grill for medium heat.
5. Brush grill grate with oil. Cook chicken slowly on the preheated grill. Turn frequently, basting often with remaining marinade mixture. Cook to desired doneness.

My Dad Birthday! And Parents Anniversary!

Just wanted to give my DAD a big BELATED BIRTHDAY wish… he is 80! (6/20), and also to my MOM & DAD 48th Anniversary! (6/22)… we will see you soon and hope that you both had a great time! I know Dad you still playing tennis everyday and Mom…do take it easy and also know that you’re playing mahjong…

Its Hump Day…AGAIN!!

Well here we are again, another hump day! The weather here is rainy…been like it for a few days, but its HOT! So its muggy and still loving it…just wished that I didnt’ have to go to work… :D

I hope that everyone is enjoying their summer days…and hopefully we can this place jamming and start having some fun! I miss you guys…come out!! PLEASE….

Okay enough of me…need to get ready for work and still had not made my lunch yet.. so gotta run…till then, keep safe and have a great day!

GOT A NEW JOB!!!

Just wanted to share with everyone…that i got a phone call from a job that i went for (this was in-house) and I got the job… i start tomorrow…so instead of having Tuesday as a day off, i will get Saturday instead…YIIIPPPPEEE… I applied for this job within the company that i work and i know that i could do the job, i had to take an excel test and apparently, I passed that test as I was only person who had scored very high!! And my interview the person that I will be working with, we “hit” it off… but I had a competitor that she has been with the company longer…but since the job entails alot of EXCEL…and there is a bit of stress related to this position, as all of you know when working within a corporate company…but I like that and i know I can handle myself well…even if they’re the big boys/gals… “been there, got the t-shirt” type of thing. I like to run ppl lives and like the feel of being in control… :D

So my schedule now is 1-10pm but i do get compensation for working nights.. so that is not to bad…

Okay, its Monday again…

Okay, worked yesterday - so got 2 days off… YYIIIPPEEEE…. don’t have to be back to work till Wed, but have to work Saturday.. oh well never mind…

Well, let see what did we do today… went to Comcast to replace a receiver that the installer put in that did not work and also replace the remote as it was used.. got a new one and the receiver…picked up Adam…Ian installed the new one and had to call cable back again as some of the premium channels didn’t want to work again…. got that sorted and we are now happy campers….Adam and i watch FACE OFF… that was a great movie… now just trying to figure out what to make for dinner… might have a cookout.. depends on Ian the cook…lol or just might cook something in the house….

Adam wants to go out and roam the streets, but I don’t feel like it….

Another day…another saga….

T.G.I.F.!!!!!!!!!!

Okay.. its finally came… FRIDAY!!!! Well, last night at work…I had an interview for another position within the company. I think the interview went very well, as I know that I can do that job very well. From what she was telling me, I would more or less be here “right hand” person…to be able to take control of things while she is gone and just run with it… I can do that, if I can work in London with a witch of a person and ran her office like I did, am sure I can do this with my eyes closed. This deals with corporate upper management and sometimes, you need to be able to be strong enough to stand your own ground. I can honestly say.. I have come across a wide range of ppl in my time and in all… they’re all the same… they like to push around their weight and see you cower to them… NOPE … not me… and some of them found me very interesting…lol… the only problem is, there is another person that is going for the position and she has been loyal (meaning sh’es been with the company longer) and the only thing that is on my side, is the score on my test of EXCEL.. cuz this is heavily excel based… I scored higher than anyone else who went for the job.. and besides, my own supervisor… “buttered me up” like candy.. so in other words, he gave me a great recommendation!

Will keep you all posted… until then…KEEP BLOGGING!!

here we are again… its a new day - Thursday which leads to Friday then the weekend…as for me, i have to work this weekend…:(

So, today we are having to put digital tv, with the high speed cable internet…i’m really excited as it just means that my internet connection will be faster…just means that i can go surfing a bit quicker; and to top that…finally going to have digital tv vs the analog kind… boy i do miss my digital tv!! Now, if only i could bring what we had in England here….hmmmm wishful thinking eh?

Hope everyone have a wonderful weekend… think of me as i slave along the telephone calling them…to get money to pay their directv bill!!! UGH!!
